- WELL, YOU GET A LITTLE VARIATION EVERY YEAR, YOU KNOW, KIND OF DEPENDIN' HOW COLD THE WINTER IS AND HOW WARM THE-- HOW WARM IT WARMS UP IN THE SPRINGTIME, BUT TYPICALLY, IT'S MORE WATER TEMPERATURE CONTROL.
ONCE YOU'RE UP INTO THE UPPER 60s, LOW 70s, THESE FISH WILL START TO MOVE BACK OUT TO THE RIVER.
THEY'RE GONNA GET BACK OUT IN THE MAIN PART OF THE RIVER TO SPAWN, SO IT'S HARD TO GIVE YOU A CALENDAR DATE, BUT, YOU KNOW, ONCE THAT WATER TEMPERATURE STARTS TO WARM UP, YOU KNOW, YOUR BITE WILL DIE RIGHT OFF, AND THEN, YOU KNOW, YOU'LL COME BACK HERE ONE DAY, AND THERE WON'T BE A FISH TO BE HAD.

- THEY GET UP ON THIS GRASS AND--PLENTY TO EAT, AND THAT'S-- YOU KNOW, HOLDS A LOT OF BAIT, AND IT'S GREAT AMBUSH POINTS FOR 'EM, AND, YOU KNOW, WE'RE SEEING A LOT OF NICE FISH LIKE THAT.
A LOT OF QUALITY SWEET TROUT FISHING.

THIS IS RIGHT BEFORE THE FISH MOVE OUT OF THE CREEKS INTO THE OPEN WATER, WHETHER IT BE BAYS OR OUT IN THE OPEN RIVER TO SPAWN BEFORE THE WATER STARTS WARMING UP, AND IT'S--YOU KNOW, IT'S IN GRASSY CONDITIONS, SO YOU'RE GONNA HAVE TO FISH YOUR BAIT A CERTAIN WAY, AND CAPTAIN GARY WILL SHOW US HOW TO DO IT.

WE'RE ABLE TO GET UP FARTHER BACK UP IN THESE CREEKS TO GET OUT OF A LOT OF THAT WEATHER AND STILL ABLE TO PUT FISH IN THE BOAT.
YOU KNOW, AND--YOU KNOW, FISHING OVER THIS GRASS IS REALLY KEY THIS TIME OF THE YEAR.
YOU KNOW, WE WERE ABLE TO USE THESE D.O.A.

BASICALLY RIGGING THOSE WEEDLESS REALLY MAKES A BIG DIFFERENCE.

- YOU KNOW, MOST BAITS YOU COULDN'T FISH IN HERE.
THE OTHER THING THAT IS VERY, VERY IMPORTANT IS USING THE RIGHT TACKLE, AND WE BOTH, YOU KNOW, HAVE VERY SENSITIVE-- WE'RE FISHING TFO RODS, MEDIUM-LIGHT TO LIGHT-ACTION RODS.
- RIGHT.
- YOU WANT ALL THE SENSITIVITY YOU CAN GET.
LIGHT BRAID.
NO MORE THAN 10-POUND TEST BRAID, YOU KNOW, AND THE APPROPRIATE KIND OF REELS TO GO WITH THAT.
YOU KNOW, WE'LL FIND SOME BIG PUPPY DRUM OR A BIG TROUT, SO, YOU KNOW, WE GOT A GOOD DRAG SYSTEM ON THESE REELS, AND THEY'RE ABLE TO THROW A LONG DISTANCE, COVER A LOT OF WATER, AND THAT'S ALL REAL, REAL KEY INTO GETTING THESE-- GETTING THESE FISH.

WITH THE LITTLE CORKSCREW TOP THERE, I LIKE THAT, 'CAUSE, YOU KNOW, PRETTY MUCH ALL YOU HAVE TO DO IS WIND THAT ON, AND THAT HELPS REALLY HOLD THAT IN PLACE, AND THEN YOU'RE JUST RUNNING THAT HOOK RIGHT UP THROUGH THE MIDDLE OF THAT, MAKING THAT NICE AND WEEDLESS.

IT IS A GREAT DISH.
IT'S GOING TO BE LOTS OF FIRE, SO MAKE SURE YOU HAVE SOME COOL DRINKS TO HELP YOU WASH IT DOWN.
WE ARE GONNA START OUT WITH OUR SAUCE, BECAUSE WE'RE GONNA WANT TO MIX OUR SAUCE TOGETHER, AND THEN WE'LL FRY OUR SHIP.
IT DOESN'T-- SHRIMP IS SO QUICK AND EASY.
IT TAKES TWO TO THREE MINUTES.
SO WE'RE GOING TO USE A LITTLE BIT OF MAYONNAISE.
WE'RE GONNA USE SOME SPICY AND SWEET CHILI SAUCE-- SOME SWEET CHILI SAUCE AND THEN SOME SPICIER HOT CHILI SAUCE.
WE'RE GONNA GIVE THAT-- AND YOU CAN, YOU KNOW-- IF YOU WANT IT SPICIER THAN THIS, YOU CAN ADD MORE.
WE'RE ALSO GONNA USE SOME SPICY BREADER, SO IT'S-- WE'RE GONNA HAVE HOT HEAT ALL AROUND.
SO WE'RE GONNA GIVE THAT A TOSS, AND THEN WE'RE GONNA SET THIS ASIDE, AND WE ARE GOING TO PULL OUT OUR SPICY BREADER, AND I LIKE TO USE MINE JUST ON A PIECE OF WAX PAPER BECAUSE IT'S EASY CLEANUP FOR ME.
AND THEN WE HAVE THIS BEAUTIFUL SHRIMP THAT WE'RE GOING TO COAT IN OUR BREADER.
SO WE'RE JUST GONNA GIVE THAT A COAT, AND THEN WE'RE GOING TO PLACE THIS IN OUR PAN.
I HAVE MY CAST-IRON SKILLET HOT WITH MY OIL IN IT, AND WE'RE JUST GONNA PLACE THESE-- AND I WOULD DO THEM IN MAYBE, LIKE, TEN AT A TIME.
YOU DON'T WANT TO OVERCROWD YOUR PAN 'CAUSE THEN YOUR HEAT WON'T STAY HOT ENOUGH.
SO WE'RE JUST GONNA PLACE THAT IN.
YOU CAN SEE, GOT THE SIZZLE GOING, AND IT--LIKE I SAID, IT'LL ONLY TAKE TWO TO THREE MINUTES TO COOK THESE.
ONCE THEY START TO TURN BROWN... GOLDEN-BROWN ON ONE SIDE, JUST GIVE 'EM A FLIP, AND YOU'RE READY TO GO.
SO WE'RE JUST GONNA PUT THESE IN HERE, LET THESE GO AHEAD AND START COOKING, AND THEN I'LL SHOW YOU WHAT THEY LOOK LIKE AFTER THEY COME OUT, 'CAUSE WE ALWAYS LIKE TO SEE THE END RESULTS, WHAT WE'RE AIMING FOR-- AT LEAST I DO WHEN I'M MAKING A RECIPE.
SO THERE WE GO.

YOU GOT THOSE NICE SIZZLING-- AND THEY'RE GONNA CONTINUE TO COOK, AND THIS IS WHAT THEY LOOK LIKE WHEN THEY COME OUT.
THEY'RE NICE AND GOLDEN-BROWN, AND I JUST KIND OF DRAIN MINE ON A PAPER TOWEL, AND THEN WE'RE GONNA TOSS 'EM IN OUR SAUCE.
THIS WILL GIVE IT A NICE COATING, AND THEN WE'RE GOING TO EITHER PUT THEM ON SOME LETTUCE LEAVES AND MAKE 'EM INTO LETTUCE WRAPS, WHICH ARE GREAT, ESPECIALLY ON A NICE HOT DAY.
YOU HAVE THIS NICE HOT, SPICY SHRIMP ON THIS NICE COOL PIECE OF LETTUCE.
IT'S A GREAT COMBINATION.
OR YOU CAN PUT 'EM ON SOME LITTLE SLIDER BUNS-- WHICH ARE FUN TOO--THAT THEY SELL IN THE STORES NOW.
AND SO WE'RE JUST GONNA GIVE THIS A TOSS IN OUR SAUCE, AND THEN WE'RE GOING TO PUT 'EM ON OUR LETTUCE, WHICH IS NICE AND COLD AND CRISP, AND THIS IS JUST LIKE A BOSTON LETTUCE, SO IT'S A NICE CUP-- IT KIND OF FORMS A LITTLE CUP FOR YOU.
AND THEN WE CAN PUT A COUPLE SHRIMP HERE ON OUR LITTLE SLIDER BUNS, AND I JUST USE SOME BROCCOLI SLAW WITH MINE 'CAUSE IT ADDS A LITTLE BIT OF CRUNCH TO IT, SO YOU'RE GONNA GET A LITTLE BIT OF COOL NEXT TO THAT SPICY SHRIMP TOO, WHICH IS WHAT WE LIKE.
AND... OOPS.
AND THEN YOU'RE READY TO GO.
YOU JUST TOP IT, AND YOU CAN TOSS IT WITH A-- TOP IT WITH A LITTLE BIT OF GREEN SCALLIONS IF YOU'D LIKE, AND IT JUST MAKES A GREAT-- IT'S A GREAT, NICE DINNER, OR YOU CAN SERVE IT FOR APPETIZERS IF YOU WANT AS WELL.
