Chef Roberto Copa Matos works in Durham where employees work for a "living wage"

Chef Roberto Copa Matos’ family lost their bakery to communism when Fidel Castro came to power in 1959. Matos says the federal minimum wage simply isn’t enough, so he pays his employees a so-called “living wage” of $15.00 an hour. It's part of a growing trend that, Matos says, leads to a happier work environment and higher productivity.
